Peanut Butter Bars

When we were first married, my husband would reminisce about the delicious peanut butter bars that school cafeterias used to serve. One day I decided I should find a recipe just like the school cafeteria peanut butter bars. After a few failed (but yummy none the less) attempts, I think we finally found them!




Peanut Butter Bars

1 1/2 cubes (3/4 c) margarine, melted
1/2 c sugar
1 c brown sugar
1/2 tsp vanilla
1 1/2 c flour
2 c oatmeal
1 egg
3/4 tsp baking soda
1/2 tsp salt
1 c or more peanut butter

Frosting:
2 c powdered sugar
1 tbsp cocoa
1 tsp vanilla
2 tbsp butter
milk

Preheat oven to 325. Mix all ingredients except the peanut butter. Press dough onto a greased cookie sheet (as far as size, the smaller the cookie sheet, the thicker the "cookie part" will be). Bake 12 min, or until light brown and fluffy. Let cool. Spread on peanut butter, as thick or as thin as you want. For the frosting, combine all ingredients and add milk while stirring until desired thickness (I have found I like mine pretty thick, or the frosting is too runny). Spread frosting over peanut butter layer.
