Meatball Subs

This is a very easy dinner that has little prep and little clean up, so of course I love it. Oh, and it is also really good.




Meatball Subs
  • 4 meatballs per sub (I buy the big bag of frozen meatballs at Costco. You know the ones that always sample and are absolutely delicious. We buy these all the time because they are so versatile!)
  • 1 sandwich/hoagie/sub roll per person. (This time I bought the mini baguettes at Costco. It comes with six, I used three for dinner, and froze the pother three for another meal).
  •  Spaghetti sauce, enough to cover the meatballs in a casserole dish (I used my frozen spagehetti sauce)
  • Motzerella and Paraesean Cheese
Cook your meatballs per package directions, covered with the spaghetti sauce. Meanwhile, prepare your sandwich rolls by cutting them open digging out some of the inside bread to make room for the meat balls, and then slather with butter. When the meatballs are done, drain off any liquid in the pan, or your sandwiches might get soggy. Then, turn your oven onto broil and stick the sandwich rolls, cut side up, for about 3 minutes. WATCH THEM, they will burn. When the rolls just start to brown on top, take them out, top with the meatballs and spaghetti sauce, then throw on some Parmesan and mozzarella.
